Started by Koji Tashiro, the “Son of Ramen God” and the producer of Ramen Champion, Tonkotsu Ikkyu is no doubt a popular pick among customers. Their go-to ramen is the Special Tonkotsu Ramen, developed specially for the Hong Kong celebrity, Eric Tsang. This bowl of creamy yet light Tonkotsu broth is decorated with 4 slices of melt-in-the-mouth pork collar chashu and is topped off with a perfectly runny hanjuku egg, black fungus and spring onion. For an added fragrance and umami to the dish, try to Special Black Garlic Oil Tonkotsu Ramen instead. 6. Uma Uma Ramen @ Forum the Shopping Mall

Did you know that the beloved Tonkotsu ramen originated in the Fukuoka Prefecture? Uma Uma Ramen boasts itself to be the Original Hakata Ramen (a term that refers to the Tonkotsu ramen used in Fukuoka), with its pork soup base to be naturally robust and free of MSG. The rich broth is made from pork bones, boiled for 10-12 hours in order to infuse the natural pork flavours into the milky broth.

A favourite from Uma Uma Ramen is the Spicy Chasiu Ramen, which uses their signature Tonkotsu broth with a splash of fiery chilli oil for an added kick. The chashu is seasoned with a spicy marinade that will leave your tastebuds tingling with every bite, and the dish is topped with a runny favoured egg, black fungus and spring onion.

Another dish to consider is the Mentaiko Ramen. The thin Hakata ramen strands is tossed in the tantalisingly savoury mentaiko (seasoned Pollack roe) sauce and the slightly charred chashu adds a hint of smokiness that complements the rich flavour of the noodles.
